DRUMSTICK SAMBAR OR MURANGAIKAI SAMBAR



 Sambar is the most essential south Indian dish served with rice. Murangaikai sambar or Drumstick is one of the best sambar varieties. Drumstick gives a beautiful aroma while making sambar. 




These are the very simple steps to make drumstick sambar,

Step 1: pressure cook 1 cup of Toor dal by adding 1/2 spoon of cumin seeds,1/4 spoon of turmeric powder for 3 whistles, mash it using a ladle (0r mathu) and keep it aside.  


Step 2: cut drumstick in to 3 inch pieces, peel off 7 to 8 shallots(sambar onions), chop 1 medium size tomato and keep it aside.
Squeeze a plum size tamarind in 1 cup of water and add 2 spoons of sambar powder and salt in it. keep it aside.


Step 3: heat 3 spoons of gingerly oil in a sambar kadai or a pan, add mustard seeds, allow them to sputter ,add urad dal ¼ spoon, add some curry leaves,1/4 spoon of hing powder, add ¼ spoon of turmeric powder, add one chopped green chilli, peeled off shallots, sauté well until shallots turn transparent, now add chopped tomato and sauté until tomatoes becomes mushy ,now add  cut drumsticks and sauté well for 4 minutes and then pour 2 cups of water and cover the pan with a lid until drumstick gets cooked and becomes soft from inside.( open the lid and sauté in between).




 Step 4: Now the drumstick got cooked, now add 1 cup of tamarind water mixed with 2 spoons of sambar powder and salt.mix well, let them cook for another 5 minutes.



Step 5: Now add cooked and mashed Toor dal and mix well. Cook for 5 minutes in medium flame and garnish with coriander leaves.

 Remove from heat, transfer it to a serving dish and serve with rice.
