ADAI / CORRIANDER SEEDS ADAI
Adai is the famous south
Indian dish. There are many types and methods to prepare adai.This is
one type of adai, which I personally like very much. My MIL taught me
this recipe .Coriander seeds is the key ingredient in this adai. That’s
why I named it as coriander seeds adai. Usually it is served with a
spoon of butter, butter will increases the taste more.
Now let’s learn how to make this mouth watering adai ,
Needed for making adai batter :
2 cups of idly rice,1/4 cup of toor dal/thuvaram paruppu, 4 spoons of coriander seeds,7to 8 red chilli.
To grind we need wet grinder,this is my wet grinder:

To mix in adai: 3 chopped onion, chopped coriander leaves 4 spoons, chopped curry leaves 3 spoons,1/4 spoon of turmeric powder, salt to taste.
METHOD:
STEP 1: Soak rice and dal together in the same bowl for 4 hrs. Then grind them in a wet grinder. Grind coarsely. Grind coriander seeds and red chilli separately in a mixe and add it to the wet grinder where rice and dal are grinding. It will now get mixed with rice and dal nicely. Now remove the batter from wet grinder. Ferment it for 10-12 hrs. Now the batter is ready.add water if needed. (Note: adai batter should be 2 times thicker than dosa batter)
STEP 2: Now take the batter in a bowl add ¼ spoon of turmeric ,salt, coriander leaves, curry leaves, chopped onion(no need to roast the onions).mix well.
STEP 3: heat dosa tawa , spread the adai batter and cook by adding little oil. Then flip and cook. Remove after the adai got cooked and become crispy.
Serve hot with butter.
