LADIES FINGER / VENDAKKAI PORIAL
1. Wash and clean the ladies finger or vendakkai , chop into small pieces. Set aside.
2. Heat oil in a pan, Add in the urad dal,channa dal, mustard seeds and the curry leaves. Wait for the mustrad seeds to splutter and the dal to turn slightly brown.
3. Now add chopped onions and sauté the onions in medium flame till the onions becomes translucent.
4. Add in the Vendakkai / Ladies finger. Add in the salt, turmeric and sambar powder and mix well.
5. Cook in the low flame for 15 to 20 mins tillthe onions and ladies finger gets roasted and dry, sauté in between to avoid the mixture from scorching on the bottom of the pan.
6.Lastly add grated coconut and mix well.
7. Switch off the flame and remove from heat.
