CARROT PORIAL(1)
Carrots are an excellent source of beta-carotene, and contain high amount of fiber. Beta carotene is important for eyesight, skin health, and normal growth.
Now lets see how to make porial using carrot.This is my first type of carrot porial, you can also search my blog (category- porial,varuval,kutu) for another tasty types.

STEP 1: Wash , peel and chop carrot in to small pieces. Pressure cook the same for 2 whistles and keep it aside.
STEP 2: heat oil(Sesame/Gingelly oil) in a pan.Add mustard seeds, urad dal, curry leaves ,pinch of hing, 3 red chilli.,sauté for 5 seconds,add pressure cooked carrots,salt and mix well. Cook for 2 minutes and add 3 spoons of greated coconut,mix well and let it cook for another 2 minutes.Then add coriander leaves.

STEP3: switch off the flame and place it in a serving bowl. Tasty carrot porial can be served with rice.
